Set the print scope to Workbook

Before exporting, go to File > Print in Google Sheets. Change the 'Print' dropdown from 'Current sheet' to 'Workbook'. Close the print preview. Now when you click the Docs to PDF extension icon, the entire workbook exports as a single PDF.

Tab order in the exported PDF

Tabs appear in the PDF in the same order they appear at the bottom of the spreadsheet. If you need a specific order in the PDF, drag the tabs into the right order before exporting.
